Green Daily giveaway: Baking with Agave Nectar
It seems like I can't go anywhere without hearing about the wonders of Agave Nectar. I probably have Oprah to thank for that. It's no wonder that this sugar substitute has been making the news. It's sweeter than the white stuff and lower on the glycemic index. Because of this, agave nectar have been making its way into recipes in place of refined sugar.I've been curious about using agave in cooking and was thrilled when Ten Speed Press sent us a copy of Baking with Agave Nectar by Ania Catalano for a giveaway. This 144 paged book is packed full of delicious recipes including Spicy Pumpkin Muffins, flour-free Amazin Black Bean Brownies, and Raspberry Sorbet.
Catalano, a natural foods chef, started baking with Agave Nectar when she was diagnosed with hypoglycemia. Her recipes are easy to follow and have been a big hit with her patrons and students.

About a year ago, I made the transition of using local honey for sugar. I have never tried agave, but would welcome the opportunity to test it out. Besides, I read cookbooks like some people read novels. Sounds like fun to me.

I love trying out new recipes - and while I've used Agave Nectar -it's usually only for granola or granola bars - I havent ventured for using it for much else. An evening of trying out new recipes for friends (with agave nectar, of course!) and baking up something fantastic sounds way more fun than a bottle of tequila to me!

Agave gives a great crumb in quick breads. I would love to see how to use it in other items.

I've never cooked with agave nectar, but have always been curious to try. As for why it's better than an evening with tequila, well who's to say I can't make some delicious agave nectar baked goods, and then wash them down with a margarita?

My wife loves it in her coffee with a little soy milk. With kids the coffee has to come before the Tequila. So in that way I guess it is better but still love the Tequila.

A night with agave nectar is better than a night with tequila, because I don't have to spend several hours hugging the toilet after an agave bender.

An evening (cooking) with agave nectar has to be better than with Tequila -- no hangover!
Seriously, I'd love to see what agave nectar can do for my - and my family's -- health.

My friend is watching her blood sugar levels to avoid diabetes. She's given up her baking. I'd love to be able to help her add some treats into her diet again (in moderation of course!)

I love agave for oatmeal and iced tea but I've never tried to bake with it. I seriously can't say the same for tequila. Blech.

Interesting that this was reposted. Maybe it got lost in all the other posts of last week. Anyway, it still sounds like an interesting cook book.

I've only used agave in hot tea so far, but I love it. I saw this book mentioned in my Kiwi magazine, and have wanting to check it out. I was planning to request my local library to get a copy in (as of now, they don't have it). So this would be an awesome prize for me to win. :) As for why an evening with agave is better than one with tequila .. hmm well I'd wake up with a smile, not feeling miserable. Although "Tequila" IS more fun to dance to. :) Not sure if anyone recorded a surf song about agave?!

In a Mexican household, the agave plant is a must for all occasions. We have a few agave plants in our back and front yard and the uses for the plant are endless...to cooling and healing burn wounds to mixing the juice with water for cleansing.

I've always been intrigued with how to incorporate agave naturally into my cooking and baking. Sure, I could look it up online, but nothing beats a beautifully photographed (and FREE) cookbook!

Agave nectar rocks. It's good on a piece of white bread. I'll also use it in peanut butter sandwiches. My family and I bought a huge jar in Mexico and we don't know how to include it in more recipes. This cookbook would be a terrific help!

I always put Agave Nectar in my tea & coffee. I love it because it sweetens the drink without adding an awkward taste (like honey). It also doesn't make me feel sick afterward like sugar does. I just wish it was cheaper to buy!
