H2Offenders: Starbucks gets blasted for leaving tap running at all locations
When it comes to corporate greenness, there are plenty of surprise winners and losers out there. For example, IBM's business practices are more eco-friendly than Apple's. Or, that the once vilified Wal-Mart is now pursuing some of the nation's most ambitious sustainability goals. To add to the list, we now find that Starbucks -- one of the most successful and consumer savvy companies around -- has been pouring enough water down the drain each day to supply the entire nation of Zambia.
That's due to a strange health/cleanliness policy that mandates that a faucet over a sink called the "dipping well" must be kept running at all times. Apparently, Starbucks health officials believe that running the tap constantly prevents bacteria growth in the pipes -- or something like that. Most experts seem to believe that Starbucks' obsession with running water is pure superstition, and a wasteful one at that. According to The Sun, leaving one Starbucks tap running for just 3 minutes wastes "the amount of water one African needs to survive for a day in drought conditions."
The problem really spirals out of control when you take into account that Starbucks is operating 10,000 stores worldwide, pouring an estimated 6.18 million gallons of water down the drain per day.

Relax....whoever wrote this story didn't do their research and Starbucks just may be within their rights to sue the pants off them for libel.
They made it sound like they're running a "normal-sized" faucet into a large sink when in fact it's about the size of a "water pik" into a 24 oz well....just enough water to create an overflow and ensure an influx of clean water.
MOST responsible health departments absolutely require utensils used over and over during the production process to be kept in a well of this type with a constant change of water. This is to prevent cross contamination of products and reduce the occurance of bacteria build-up.
Would you prefer that the utensils be kept in dirty water for the entire shift or that they use one-time disposables instead?
I wouldn't.....and Starbucks not only pays for the water they use, they also pay a sewerage charge for all water that goes down the drain.

Don't boycott Starbucks over this article about water use. If you don't like Starbucks, fine. But the fact that they keep there untensils in a "bath" of constantly running water is because they are required to by law. Dairy Queen has to do it also. If you think it's stupid, then register a complaint with the board of health in your county or state. That's who's requiring it.

Dick Cheney personally pours water down the drain in a D.C. starbucks!!!
I really don't care...if the africans need water they need to take their government back from the warlords and stop waiting for the world to rescue them. Relating this water usage to African drought is a liberal attempt to punish America for being successful.
Starbucks can do what they want, and I'll keep going there.

The water that's being wasted is water that has been processed in a water treatment plant, not the cheapest process in the world. Did you honestly think that water comes to you straight from the lake? That's why it's wasted, because the process it goes through costs money and other resources that could have been spared if it was just going to go down a drain.

I'm from Richmond, and have lived in VA all my life. I have worked in food service since I was 14, now 31. I have worked in quite a few restaurants and one Coffee Beanery, and have never seen where the health department required any of them to leave water running. In fact, one health inspector called one of my bosses down for having drippy faucets, because he was wasting water.

The health dept requires it in KY also. All the Dairy Queens, Basking Robbins....etc do the same. It is a very small stream but it must run at all times.

This is true..even in Illinois it is a health dept violation if you don't leave the water running..they even require you to put a special sink in just for any scoops, or utensils used for ice cream, cakes, etc. We have argued this point and have had to endure violation points for not running it. Starbucks should have their local health department in the spotlight...let them answer why???

Yeah, but if you're short on water, like Georgia right now, its stupid to waste it. All that water processing costs money somewhere And its local taxes that pay for water quality. Water treatment plants.
If you have good piping, there is no problem with water. If you have damaged pipes, or cross connected clean water and waste water (this can happen) you're going to have problems whether you keep it running or not.
I worked in the state health dept, never heard of keeping the taps running. Now if you have an area that you put scoops in between servings, it makes sense to run water there. But it makes just as much sense to have enough scoops to clean them when you run out. And you'd want hot water. Melts the ice cream and hot scoops scoop easier.

Frank, It is true that hot water would make the ice cream easier to scoop but isn't needed or wanted in frozen confections. Cold water will scoop through batch frozen ice cream held at the proper serving temp. Hot water would contribute to causing the ice cream to melt and cause the stabilizers to kick in. The point is to get frozen items to the guest quickly and cleanly while maintaining the integrity. Ever tried to quenelle whipped cream with a hot spoon? No fun and no cool shape. Ciao.
