Dream Eco-couples: Ed Beagley Jr and Chelsea Clinton

Truth be told, Ed and Chelsea are only on this list because the thought of them having children is equal parts amazing and hysterical. Regardless, if you look past the fact that a) Ed is like seven times Chelsea's age, b) he's married, and c) they're both kind of funny looking, the pair might make for an impressive eco-couple (or at least a damned exciting eco-affair).
Ed has been green since the dawn of time -- spreading the eco-friendly word through his weekly TV show, and more recently via a new book. Chelsea is a card-carrying vegetarian, and, now that she's embracing her notoriety and stepping into the spotlight, could easily join her loving eco-man in the public eye.
Their house:
Would be modest. Neither seem particularly flashy, so it wouldn't be surprising to see them opt for an out-of-the-way cottage on the outskirts of Seattle, Portland, or some other green-leaning city. It'd be a shining example of easy energy-savings solutions for the everyday consumer -- compact florescent light bulbs, Energy Star certified appliances, and an impeccable compost bin out back. Look out for them at the local Whole Foods, and ask about how you can get involved with the community garden they're planning to organize for the neighborhood.
Their cars:
Would be similarly low-key. Chelsea, president's daughter that she is, can't quite bring herself to drive a Toyota (or worse yet, a Honda), so she cruises around in the new Lexus hybrid. Meanwhile Ed probably tricked out some old pick-up to run on clean-burning bio-fuel.
Their kids:
Are in their 30s (from Ed's previous relationship). After years of hearing her mother say that "the only reason [she] had kids was to look more wholesome for voters," Chelsea is secretly relieved that she won't be having any of her own. Though it would be nice if her step-children spoke to her -- at least on holidays (even if they are older than she is).
