Safe Mama takes on this question. The winner is ... silicone! Silicone is non-porous and does not contain bisphenol-A, phthalates or PVC.
What's up with latex? Latex is also BPA free, but there is research showing that latex can leach nitrosamines, which can act as carcinogens, over time. There is also some evidence that exposure to latex early in life can predispose babies to latex allergies later in life.

I am wondering if this article is talking about REAL latex (from the rubber tree) or synthetic latex? It is frustrating to think that the REAL rubber would be leaching those nitrosatomines as I am thinking of getting a latex bed and just purchased the real latex rubber duckie as a safer alternative to regular plastic. Also, I have read that manufacturers can somehow remove or neutralize the protein in latex that causes allergies.
